San Jose’s Cynthia Calvillo, MMA Jewel

June 17, 2020,

Nestled in and partnering with the Silicon Valley can do wonders for your image.

San Jose, once a sleepy suburb of San Francisco, has a number of luminaries propelling it to shine bright on a world economic map.

San Jose is the cultural, financial, and political center of Silicon Valley and the largest city in Northern California, by both population and area.

With an estimated 2019 population of 1,021,795, it is the third-most populous city in California (after Los Angeles and San Diego) and the tenth-most populous in United States.

Located in the center of the Santa Clara Valley, on the southern shore of San Francisco Bay, San Jose covers an area of 179.97 square miles.

San Jose is the most affluent county in California and one of the most affluent counties in the United States.

That resume should make any region feel green with pride.

The world travelers at Lonely Planet provide an observation, “Founded in 1777 as El Pueblo de San José de Guadalupe, San Jose is California’s oldest Spanish civilian settlement. Its downtown is small and scarcely used for a city of its size, though it does bustle with twenty-something club goers on weekends.”

We can attest to the quietness of San Jose’s downtown since we have shot plenty of female fight videos in San Jose.

There is a female fighter who is making a lot of noise and making San Jose proud.

Cynthia Calvillo is a mixed martial artist who competes in the straw weight and flyweight divisions of the Ultimate Fighting Championship. As of September 23, 2019, she is #10 in the UFC women's straw weight rankings.

Her hometown is San Jose.

Cynthia made her amateur debut in 2012, and garnered a 5-1 record over four years.

In her UFC debut, Cynthia accepted a ten-day notice fight against Amanda Cooper at UFC 209 on March 4, 2017. She defeated Ms. Cooper by submission in the first round.

Following her successful UFC debut, she was asked to join the main card of UFC 210 against promotional newcomer Pearl Gonzalez. Gonzalez was ruled out of the contest after the NYSAC said she could not fight because of her breast implants, which are banned among combat-sports competitors. Later the decision was reversed and the fight was allowed to go on as scheduled. Calvillo won the fight by third round rear-naked choke submission.

Her biggest win was yet to come.

On June 13, 2020, espn.com reported, “Saturday's UFC Fight Night card started with three first-minute flash knockouts and ended with Cynthia Calvillo making an emphatic statement in her UFC women's flyweight debut. Calvillo soundly defeated Jessica Eye and instantly put herself in the conversation among the best in the division.”

That is a conversation being discussed and heard around the female fighting world.

When watching her bouts, there is something very consistent that occurs in her victories. In our fully competitive female submission grappling world, the Fem Competitor is warned over and over not to give up her back. The opponents of Cynthia should have been warned about that as well.

Over and over.

Because that is what happens, over and over.

Once Cynthia climbs upon your back, you are finished. It’s brutal.

Cynthia loves to talk about her hometown of San Jose.

Over and over. For good reason.

When Grappling Stars shot video there, we always socialized afterwards and went out to lunch or dinner. We went to this great Mexican restaurant twice. It’s been a few years, so we forgot the name, but when it comes to great Mexican restaurants in San Jose, you still have plenty of choices.

We salivated over the variety of options and while doing so, one restaurant caught our eye.

We love the aroma coming from LUNA Mexican Kitchen – The Alameda.

Time for a visit.

At Trip Advisor the customers echo our love. Here are two reviews:

“We have lived at the Pruneyard for almost 5 years and when Luna's moved in, we tried it and right away fell in love. We have since gone here dozens of times and we are happy to report is have been 100% consistent.”

Here is another.

“This is a MUST stop eating experience for us when we are in the Santa Clara. The very best service and an amazing job is done with seating so many people that obviously love Luna as much as we do.”

Perhaps one more.

“What a lovely evening and fantastic food at Luna’s. Sat outside and had the Enchiladas Suiza and the Choco flan for dessert. The chicken enchiladas were fresh and a large portion with the rice, beans, salad and Verde sauce.”

See what we mean? We sense their delicious food and exceptional customer service is found in their purpose and mission.

At their welcoming home lunamexicankitchen.com they explain, “At LUNA Mexican Kitchen, we believe in the healing power of food. Each ingredient we put into our bodies serves a purpose—giving us energy and making us stronger to live longer, healthier lives.

We’re proud to use ingredients that have been nurtured slowly, with care, all the way from the farms to our kitchen. We cook with intention and put heart into every dish. We take no shortcuts and do our best to accommodate our guests’ dietary needs and food sensitivities.

The foundation of our food is the masa we make using the ancestral method of nixtamalization.

Our corn is soaked in alkaline overnight, rinsed and then ground with stone in a labor-intensive process very few kitchens attempt. We do it daily to create grains that are better flavored and better for you.

The meals we share bring us together. We believe it’s important to be inclusive and customize for different allergies and diets. Vegetarian. Vegan. Gluten-Free.”

What makes their meals even more special is that they are made from scratch.

There is so much to do and see in San Jose. It is an ever evolving and expanding California economic giant.

Now we also can enjoy the powerful talent of a San Jose Alum in MMA super star Cynthia Calvillo.

A rising star from a stellar California metropolis.

Both rich in expectations.
